Chemical properties:

Pure β-carotene is dark red or dark red, shiny rhombohedral or crystalline powder. It is almost insoluble in water, inorganic acids, inorganic bases, glycerol, propylene glycol, slightly soluble in methanol, ethanol, cyclohexane, soluble in petroleum ether, ether, oils, and easily soluble in carbon disulfide, acetone, benzene, and chloroform. Dilute solution is yellow. It is unstable to light and heat. It is easily oxidized by air to inactive substances.

Uses:

β-carotene can be used as a nutritional supplement and food coloring.
